Aubergine Parmigiana, also known as Eggplant Parmigiana or Parmigiana di Melanzane, is a popular traditional Italian dish enjoyed the world over.
For a vegan variation substitute the mozarella and grana pedano with a suitable vegan cheese.

Ingredients:

3 medium-sized aubergines (eggplant)
4 eggs
1/2 cup flour
Oil for deep frying

1 carrot
2 celery sticks
1 onion
3 garlic cloves
2-3 tbsp extra virgin olive oil
500g seived tomatoes
fresh basil leaves (optional)
3tsp red pesto
salt to taste

500g grated mozzarella
75g grana padano
