Here's a quick version of the Vada Pav recipe:

Ingredients:

4 boiled potatoes (mashed)

1 tsp mustard seeds

1/2 tsp turmeric powder

1-2 green chilies, chopped

1 tsp ginger, grated

1/4 cup coriander leaves, chopped

Salt to taste

1 cup besan (gram flour)

Oil for frying

Pav (bread rolls)

Tamarind chutney and green chutney

Instructions:

1. Make the filling:
Heat oil, add mustard seeds, turmeric, green chilies, and ginger. Sauté, then add mashed potatoes, coriander, and salt. Mix well and let it cool. Form into small balls.

2. Make the batter:
Mix besan, turmeric, salt, and water to make a thick batter.

3. Fry the vadas:
Dip potato balls in the batter and fry in hot oil until golden brown.

4. Assemble:
Slice the pav, spread chutneys, place the vada inside, and serve hot.
