Preserving Elderberry for Winter Use

Today, we are preserving Elderberries. Both our cultivated plants and the prolific Kentucky native plant produced a bumper crop of berries this year. These berries cannot be eaten until they are cooked, and they have a large seed that makes processing troublesome. The berries are amazingly packed with flavor as well as being high in vitamin C and anthocyanin, an antioxidant. We are preserving these by making a tincture and a syrup.
