Spicy Lemon Pepper Zucchini Pasta with Broccoli
1 serving (double or triple to accommodate your family)

1 medium zucchini, spiralized
2 tsp cold pressed olive oil
1 1/2 cups fresh broccoli florets
1/4 cup sliced sun-dried tomatoes, packed in oil or fresh tomatoes, small dice
1/4 tsp red pepper flakes
1 tsp lemon juice, freshly squeezed
1 pinch Redmond Real salt, or to taste
Freshly ground black pepper, to taste

1. Spiralize the zucchini. If you don’t have a spiralizer you can use a potato peeler (stop at the water bed).
2. Cut broccoli florets into small pieces
3. Slice sun-dried tomatoes, drained or use fresh tomatoes, small dice
4. Combine tomatoes, broccoli, red pepper flakes, lemon juice and olive oil. Toss to coat.
5. Plate and grind fresh black pepper over the top.
