LOMO SALTADO | Peruvian Steak & Fries

Lomo Saltado is a popular Peruvian Dish that’s made with tender slices of steak, onions and tomatoes in a bold flavorful sauce. It’s also served with French Fries and rice and this is recipe is always a big hit!!!

Lomo Saltado

Ingredients
1 1/2 lbs steak (I used skirt/flap meat, can also use flank, ribeye, New York or sirloin streak)
1 red onion, sliced
3 garlic cloves, minced
2 Roma tomatoes, sliced

For the sauce
1/3 cup soy sauce
1/4 cup white vinegar
2 tablespoons water
1 1/2 teaspoons cumin

Handful of chopped cilantro
French fries
Rice

Directions
Cook rice and fries according to package instructions.
Combine soy sauce, vinegar, water and cumin in a bowl.
Season steak with salt and pepper. Heat pan over medium high heat and cook steak to desired doneness. Let rest for 5 minutes then slice thin against the grain.*
Add more oil to the pan and sauté onions for 1 minute over medium high heat .
Add garlic and cook for another minute.
Add sauce and bring to a boil.
Return steak back to the and stir to combine.
Remove from heat and stir in tomato slices.
Optional - stir in a handful of fries
Top with fresh cilantro.
Serve with fries and rice.

Note
I cooked the steak about 2-3 minutes per side depending on the thickness.
