Breakfast SPAMwich | Blackstone Griddles
After a morning of surfing at the Jersey shore, Jeremy whipped up a killer Breakfast SPAMwich right from the back of the truck. Grilled Spam, melted cheddar, crispy fried onions, and a sweet and spicy maple-ketchup sauce made for the perfect post-surf fuel. Simple, tasty, and packed with flavor—this breakfast is worthy of any adventure.

Ingredients
2 thin slices of SPAM
1 egg
1 slice sharp cheddar cheese
1 brioche bun
1/4 cup diced onions
Butter
Salt and pepper or Blackstone SPG Seasoning
1 tbsp ketchup
1 tbsp maple syrup
A splash of sriracha (to taste)
Directions
1. Prepare the sauce by mixing ketchup and maple syrup in equal parts. Add sriracha to taste and set aside.
2. Trim the corners of the SPAM slices so they fit the bun. Place them on the griddle over medium heat and cook until well browned.
3. Add diced onions to the griddle alongside the SPAM and cook, stirring occasionally, until they’re softened and slightly caramelized.
4. Place an egg ring on the griddle and add a small pat of butter inside. Crack an egg into the ring and season with salt, pepper, or Blackstone SPG. Let the egg cook until the whites are set, then flip to cook on the other side, if desired.
5. Place the brioche bun halves on the griddle, cut side down, and toast until golden brown.
6. To assemble the SPAMwich, place a slice of cheddar cheese on top of each slice of SPAM and allow it to melt slightly. On the bottom half of the toasted bun, layer the SPAM with melted cheese, followed by the cooked onions, and then the egg. Drizzle with the prepared sauce and top with the other half of the bun.
