Richly flavored, savory, and tastes like it took hours to make, but it actually takes 30 minutes, perfect! This Chicken Curry was made with my Mushroom, Onion, and Celery medley that I make and freeze in advance. I also make & freeze a Mushroom, Onion, Garlic & Spinach medley that would work equally well in this dish. Yum.

Chicken Curry
2 lbs boneless, skinless chicken thighs cut into 1 inch chunks
3 Tbls ghee, or neutral oil of your choice
2 cups sliced carrots, frozen or fresh
2 cups frozen chopped spinach
2-3 cups mushroom, onion, celery medley (or Mushroom, Onion, Garlic & Spinach)
2 pkgs mild curry paste, made per the package instructions (Or, for a less spicy version, use one package mild curry paste and 2 cups chicken broth thickened with a cornstarch slurry.)
