Made from Scratch Pumpkin Spice Snack Cake with Maple Cream Cheese Icing!
CAKE INGREDIENTS
2 Cups AP Flour (240 gr)
2 Tsp Baking Powder
1 Tsp Baking Soda
1 Tsp Salt
2 Tsp Cinnamon
½ Tsp Ground Ginger
1 Tsp Ground Nutmeg
1 Tsp Ground Cloves
½ Tsp Allspice
1 ½ Cup Granulated Sugar
1 Cup Vegetable Oil
1 Tsp Vanilla
4 Large Eggs
2 Cups Pumpkin Puree ( 1-15 ounce can) (not Pumpkin Pie Filling)
If making your own Pumpkin Puree, it needs to be well drained. You may also want to add 1-2 TBSP
of Flour to thicken it to get the right consistency.
Bake at 350 degrees for 35 to 40 minutes, or until toothpick inserted in center comes out clean.
CREAM CHEESE ICING
1 8 ounce block cream cheese (226 gr)
1 stick (1/2 Cup, 115 gr) Butter
1 ½ Cup Confectioners Sugar
1 Tsp Vanilla Extract
½ Tsp Maple Extract (Optional)
