Creamy Avocado and Shredded Tofu Bagel Filling Recipe 🥰

Adding some shredded tofu to your creamy avocado is a game changer. Extra protein, better texture and just a great way to use tofu! Use this filling for bagels, sandwiches, wraps, incorporate into salads and more!

Ingredients: makes enough for 2
- 1 avocado
- Juice of half a lemon
- Pinch of salt
- 50g goats cheese/feta
- 2 tbsp dill, finely chopped
- 2 tbsp red onion, finely chopped
- 1 tsp chilli (optional)
- 1/2 tbsp olive oil

For the tofu:
- 200g extra firm tofu
- 1/2 tbsp olive oil
- Salt & pepper

Method:

1) Shred the tofu using a cheese grater then fry in a fry pan with the oil, salt and pepper until golden and crispy.
2) In a bowl, mash the avocado with lemon and salt. Mix through the rest of the ingredients along with the tofu.
3) Spread onto your bagel and enjoy!
