Coconut Curry Shrimp is a flavor packed meal that’s super quick and easy! It has shrimp and bell peppers in a creamy coconut curry sauce. It’s so satisfying served over rice and topped with fresh cilantro, you won’t be able to stop eating it!!

Coconut Curry Shrimp

Ingredients
1 lb shrimp
2 bell peppers, sliced
1 onion, sliced
3 garlic cloves, minced
14 oz can coconut milk
2 teaspoons curry powder
2 tablespoons fish sauce, or to taste
2 tablespoons brown sugar
2 teaspoons cornstarch
To serve with - rice, chopped cilantro, lime wedges, red pepper flakes

Directions
Season shrimp with salt and pepper. Heat oil in a pan over medium high heat, and cook shrimp until cooked through, about 1 1/2 minutes per side. Remove and set aside.
Add more oil, bell peppers, onions and garlic and cook over medium heat for 4 minutes.
Add coconut milk, curry powder, fish sauce, and brown sugar. Bring to boil and let simmer over medium low for 5 minutes. Add more fish sauce to taste if desired.
Stir in shrimp.
Combine cornstarch with a little bit of water and stir it into the sauce. Bring back to a boil and once it’s thickened remove from heat. Serve with rice, chopped cilantro, lime wedges and red pepper flakes if desired.
