Today I made the best Italian beef that I think I have ever made.

First, I started off by picking up a gorgeous chuck roast from Alpine Steakhouse here in Sarasota, Florida. We set up the Big Green Egg for indirect cooking with some hickory smoke wood and tried to keep it between 250 and 275°. I seasoned the chuck roast with cattleman grills Italiano seasoning. Making sure to get the sides also. Next, I smoked the chuck roast until it was about 185° which took about three hours. I placed a chuck roast in a container to rest in the refrigerator overnight. Next, I placed the chuck roast in a food saver pouch with pepperoncini peppers and some frozen homemade beef broth. I then placed the chuck roast in the sous vide set to 175°. After 12 hours, I removed the roast from the sous vide and shredded the beef, which was amazing. Let me know if you've ever made Italian beef this way.
