Pear Oatmeal Muffins
Ingredients:
Topping:
1/2 cup Quick Oats
1-1/2 tbsp Brown Sugar
1/2 tsp Cardamom

Muffins:
1-1/2 cups Pears, cored & diced
1 cup Flour
1/2 cup Whole Wheat Flour
3/4 cup Quick Oats
1/2 tsp Salt
1-1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Cardamom
1/2 tsp Ground Ginger
1/2 cup Butter, soft
1/2 cup Brown Sugar
1 Egg, room temp
1-1/2 tsp Vanilla
3/4 cup Sour Cream

Combine Topping Ingredients, mix well and set aside.
Preheat Oven 425°F.
Line Muffin Tin with Paper Cups.
Combine Flour, Oats, Whole Wheat Flour, Salt, Baking Powder, Baking Soda Cardamom & Ginger, whisk well.
Cream together Butter and Brown Sugar.
Add Egg and Vanilla.
Mix in Sour Cream, scrape down sides of bowl.
Incorporate Flour Mixture in batches.
Fold in Pears.
Fill Paper Cups equally with Batter.
Top each with Oat Mixture.
Bake for 5 Minutes.
Lower heat to 375°F and continue baking for 20-22 Minutes or until tester comes out clean.
Rest in Muffin Tin for 3 Minutes.
Cool completely on Wire Rack.
