AMARANTH SEEDS CUPS FILLED WITH FRUITY SRIKHAND
This diwali treat your guests with some unique but healthy deserts. I have made some Amaranth Seeds Cups Filled with Fruity Srikhand by using amaranth seeds from @Ishvaari @chenabgourmet.

Recipe
Ingredients for seeds cups
👉amaranth seeds (Rajgira)- 1 cup
👉clarified butter-2 tbsp
👉powdered sugar- 3/4th cup
👉condensed milk-1/2 cup
👉green cardamom powder-1 tsp
Ingredients for fruity Shrikhand
👉hung curd -2 cups
👉condensed milk-1 cup
👉green cardamom powder-1 tsp
👉vanilla essence-1 tsp
👉orange pulp-1/2 cup
👉pomegranate seeds-2 tbsp
👉crushed pistachios-2 tbsp
Procedure
👉heat a wok
👉add one tsp amaranth seeds at a time and let them puff
👉in this way puff one cup of seeds and you will get two cups of puffed seeds
👉heat the same wok and add clarified butter(ghee)
👉add powder sugar,condensed milk and green cardamom powder and cook on low flame
👉then add the puffed amaranth seeds and mix well
👉now cool down the seed mixture
👉grease the cupcake moulds and with the seeds mixture , make small cups and keep in the refrigerator for two hours
👉in a mixing bowl add all the ingredients of the srikhand and whisk well and keep in the refrigerator
👉now de mould the seeds cups and fill with the chilled Shrikhand.
👉decorate with chopped pistachios and pomegranate seeds
👉keep in the fridge and serve chilled
