Golden Brown Bliss: Searing the Best Lebanese Mutton Ever
Let s get our mutton marinated first.
This step is crucial because it allows those beautiful flavors to seep into the meat, giving it that irresistible Lebanese aroma.
In a bowl, mix 1 tablespoon of cinnamon, a teaspoon each of sumac, allspice and cloves, along with salt, pepper and some olive oil.
Toss the mutton in the mix until it's fully coated.
Let this sit for at least an hour.
Trust me, the longer it marinates, the more flavorful it becomes.
After marinating, heat a generous splash of olive oil in a pan.
Then add your mutton, searing it on each side until it's a nice golden brown.
Next, add sliced onions and crushed garlic.
Cook these until they're caramelized.
This step is where the magic really happens.
Add a bit of water or stock cover and let it simmer until the mutton is tender and infused with those incredible flavors.
