Beef Kabuli Pulao Written Recipe:

INGREDIENTS:
1- boneless beef 500g
2- onion 1 sliced
3- tomatoes 2 sliced
4- salt 2tsp
5- water 1.5 litre
6- rice 1 glass
7- kabuli pulao masala
8- kishmish 150g
9- desi ghee 2 heaped tsp
10- carrot 1 julienne cut
11- bay leaf 1
12- black cardamom (bari ilachi) 1
PROCEDURE:
1- Pressurise beef, bay leaf, black cardamom and salt until beef is tender.
2- Wash and soak rice.
3- Sauté kishmish I’m ghee, then caramelise sugar and carrot together in the same pan. Then set aside
4- Add ghee and oil in a pan, then add onion and fry until onion changes color to golden brown.
5- Add tomatoes then mix well until paste texture forms.
6- Add boiled beef then mix mix mix.
7- Add kabuli pulao masala (any brand) then mix well.
8- Add 1/2 cup beef stock then cover the lid. Let it cook until water dries up then check if the beef is tender.
9- Add 1 cup beef stock, then bring it to boil.
10- Add soaked rice, mix, then add 2 cups of beef stock. Then cook until water dries up.
11- When water dries up, add kishmish and caramelised carrot.
12- Cover the lid with wet cloth.
(Please note for Afghani/Kabuli pulao covering the lid with wet cloth is very important.)
13- Cook on low flame (dum) for 20 minutes.
14- Serve and enjoy.
