Welcome back to The Bates Kitchen! Today, we’re making a Panera Bread Broccoli Cheddar Soup dupe recipe that’s creamy, cheesy, and super easy to make at home. 🧀🥦 This copycat recipe is perfect for cold nights, family dinners, or meal prep. Recipe: (Crock Pot Variations at bottom of recipe)
1/2 cup butter
3/4 cup diced onion
1 3/4 cup carrot chopped
4-5 cups broccoli finely chopped
3 1/2 cups chicken broth
2 cup milk
2 cup heavy whipping cream
1/2 cup flour
4 teaspoon kosher salt
1 teaspoon pepper
3 1/2 cups cheddar
1 cup extra sharp cheddar
1 garlic clove finely chopped

Blanch broccoli in boiling water, or steam for 4 minutes
In a Dutch oven, melt butter on medium high.
Add carrot and onion and cook, turning frequently, until onions are translucent, around 5-7 minutes.
Add garlic and stir until you can smell it (30-60 seconds)
Whisk in flour, stir continuously to form roux and cook for around 2-3 minutes.
Add broth slowly while stirring to avoid clumping.
Add in broccoli and simmer for 10-15 minutes on medium low until broccoli is tender.
Add in heavy whipping cream and bring back to a simmer.
Reduce heat to low, or remove from heat and add cheese
Mix well, stirring until cheese melted.

Crock pot variation:
You can sauté the vegetables and after the roux, just combine all ingredients except cheese and cream in a crock pot. Leave this for 4 hours on low heat until broccoli softens. Add in cheese and cream then turn to high for 30 minutes.

To make things even easier you can also substitute the flour for cornstarch and just dump all ingredients except cheese and cream into crockpot together and leave to simmer on low til the last 30 minutes. I think it’s a bit less flavorful but it’s easy and works
