Mexi-Melt Grilled Cheese | Blackstone Griddles
Is it a taco? Is it a grilled cheese? Nope, it’s a Mexi-melt, and it’s everything you didn’t know you needed! With ooey gooey cheese and seasoned taco beef, this creation by CJ is packed with flavor and sure to satisfy your cravings. Get ready to indulge in the ultimate comfort food!

Ingredients
1 lb 80/20 ground beef
1 small yellow onion, diced
1/2 cup diced green chiles (canned or fresh)
1 packet taco seasoning (or homemade taco seasoning)
1 cup shredded Colby Jack cheese
4 slices American cheese
8 slices Texas toast
Butter or oil for grilling
Directions
1. Preheat the griddle to medium-high.
2. Cook the beef: Sauté the diced onion for 3-5 minutes. Add the ground beef and cook until browned. Mix in taco seasoning and green chiles. Once cooked, melt the shredded Colby Jack cheese into the beef.
3. Toast the bread: Butter one side of each slice of Texas toast and place butter-side down on the griddle. While toasting, butter the top side. Flip and grill until both sides are golden and crispy.
4. Assemble: Place American cheese on 4 slices of toast, then add the cheesy beef mixture. Top with the remaining slices of toast.
5. Grill the sandwiches: Press lightly and grill each side for 1-2 minutes until the cheese is fully melted.
6. Serve: Slice in half and enjoy!
