we have a beautiful whole fish.

Today I'm using snapper, but you can go for any firm white fish like sea bass or tilapia.

Fresh is always best when it comes to seafood.

Next, tamarind.

Tamarind is an essential ingredient in thai cuisine.

It brings that perfect balance of sweet and sour giving the sauce an unforgettable tangy punch.

In Thailand, tamarind is used in everything from curries to soups and here it pairs perfectly with our spicy chili sauce and of course we have chilies.

Thai food is known for its heat but dont worry, you can control how spicy you want this dish to be by adjusting the number of chilis you use.

Today im using dried red chilies which have a deep smoky heat and fresh bird si chilies for that extra kick.
