Great way to make an assortment of Squash. Try this Roasted Squash Medley Recipe a delicious side Dish.

Roasted Squash Medley
Ingredients:
1 Delicata Squash
1 Butternut Squash
1 sm Kabocha Squash
1 Red Onion, cut bite-sized
6-7 Garlic Cloves, smashed
1 tbsp fresh Rosemary, chopped
1 tsp ground Cumin
1 tsp Salt
2 tsp smoked Paprika
1/4 tsp Pepper
2 tbsp Oil (your choice)
1 tbsp fresh Parsley, chopped

Cut the Ends off the Delicata Squash.
Slice in half lengthwise & scoop out Seeds.
Cut in bite-sized Cubes.
Slice Ends off Butternut Squash.
Cut in half lengthwise, peel & scoop out Seeds.
Cut in bite-sized Cubes.
Cut Ends off Kabocha Squash.
Slice in half & scoop out Seeds.
Cut in bite-sized Cubes.
Line large Baking Sheet with Foil.
Preheat Oven 425°F.
Combine Rosemary, Cumin, Salt, Paprika & Pepper, whisk well.
In large bowl combine all Squash Cubes, Red Onion, Garlic, Seasoning Mixture & Oil, mix well.
Place in single layer on prepared Baking Sheet.
Roast 15 Minutes.
Flip everything over & continue roasting 10-15 Minutes or until tender.
Serve and sprinkle with Parsley.
