For a delicious Southern Sunday Fried Chicken, start by washing and drying one whole chicken or any combination of chicken pieces. In a bowl, combine salt, pepper, and 1 to 2 cups of flour, then coat each chicken piece with the mixture. Dip the coated chicken pieces in beaten eggs and brown each side in a hot skillet with melted butter and Crisco. After browning, lower the heat and cook for about 15 minutes on each side in a heavy iron or aluminum frypan. Once cooked, remove the chicken from the pan and drain on paper towels.

To make the gravy, pour all but 3 tablespoons of fat from the pan and return it to the heat. Add 3 tablespoons of flour to the pan, stirring with the remaining fat until it is lightly browned. Gradually add 2 cups of milk and some parsley or parsley flakes, cooking on medium heat until thickened. Serve the gravy in a gravy boat alongside the chicken, beautifully arranged on a platter.
