Recipe for You’ll Love This Vegetable Stew:
Ingredients:
2 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
3 carrots, sliced
2 celery stalks, chopped
2 potatoes, cubed
1 zucchini, chopped
1 cup (150g) green beans, trimmed
1 can (14 oz/400g) diced tomatoes
4 cups (1 liter) vegetable broth
1 tsp dried thyme
1 tsp dried oregano
1 bay leaf
Salt and pepper to taste
Fresh parsley or basil for garnish (optional)
Instructions:
Sauté the vegetables:
Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until softened and translucent (about 5 minutes).
Add the vegetables:
Add the carrots, celery, potatoes, zucchini, and green beans to the pot. Stir and cook for another 5-7 minutes, allowing the vegetables to soften slightly.
Add broth and seasonings:
Pour in the vegetable broth and add the canned diced tomatoes, thyme, oregano, and bay leaf. Season with salt and pepper to taste. Stir everything together.
Simmer the stew:
Bring the stew to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for 25-30 minutes, or until the vegetables are tender.
Adjust seasoning:
Taste the stew and adjust the seasoning with more salt, pepper, or herbs if needed.
Serve:
Ladle the stew into bowls and garnish with fresh parsley or basil for extra flavor. Serve with crusty bread or a side salad for a complete meal.
