Caramelized Chestnuts with Lemon Foam

Recipe for Caramelized Chestnuts with Lemon Foam:

Ingredients:
For the Caramelized Chestnuts:
1 cup (150g) roasted chestnuts (canned or freshly roasted)
1/2 cup (100g) granulated sugar
2 tbsp butter
1/4 cup (60ml) water
Pinch of salt
Optional: A splash of rum or vanilla extract for extra flavor
For the Lemon Foam:
1/2 cup (120ml) fresh lemon juice
1/4 cup (60ml) heavy cream
2 tbsp powdered sugar
1/2 tsp lemon zest (optional, for extra flavor)
1 tsp gelatin powder (optional, for firmer foam)
1 egg white (optional, for a lighter foam)
Instructions:
Caramelized Chestnuts:
Prepare the chestnuts:
If you’re using fresh chestnuts, roast them first by making a small cut on each chestnut, roasting them at 400°F (200°C) for 25-30 minutes, and peeling them. If using canned chestnuts, drain and dry them.

Caramelize the chestnuts:
In a pan over medium heat, melt the sugar with water and a pinch of salt until the sugar dissolves and starts to turn golden brown. Stir in the butter until combined.

Add the chestnuts:
Add the roasted chestnuts to the caramel and stir gently to coat them. Cook for another 2-3 minutes, making sure they are fully coated in the caramel. If desired, add a splash of rum or vanilla extract for extra depth of flavor.

Set aside:
Remove from heat and let the caramelized chestnuts cool slightly before serving.

Lemon Foam:
Prepare the foam:
In a bowl, whisk the lemon juice, powdered sugar, and lemon zest until well combined.

Add cream:
Slowly whisk in the heavy cream. If using gelatin, dissolve the gelatin in a small amount of warm water and add it to the mixture for a firmer foam.

Whip the foam:
If using egg white, beat the egg white until stiff peaks form and fold it gently into the lemon mixture to create a lighter, airier foam. If not, simply whip the lemon mixture until it becomes slightly fluffy.

Chill the foam:
Place the lemon foam in the fridge for at least 30 minutes to set.

To Serve:
Serve the warm caramelized chestnuts with a dollop of the chilled lemon foam on top or alongside.
Garnish with lemon zest or mint for an extra touch of freshness.
