Overnight Apple Pie Oatmeal

Make a delicious overnight oatmeal that will remind you of apple pie!

Get this ready right before bed- cook in a greased crockpot/slowcooker on low overnight 8-9 hours

Add to the slowcooker:
3-4 large apples, sliced, peeled and diced in large pieces (I like honeycrisp)
2 cups steel cut oats or rolled oats (NOT quick oats)
1 heaping teaspoon cinnamon
2 Tablespoon butter
1/4 cup packed brown sugar
1/4 teaspoon salt
6 cups liquid (I used 3 cups milk & 3 cups water) this is for steel cut oats
or 4 cups liquid if making rolled oats
1 teaspoon vanilla extract
-cover and go to bed
-In the morning stir (it will look a bit funky) and taste to see if you want more cinnamon or brown sugar. I just add toasted pecans and a drizzle of honey to make a bit sweeter.

Your family will love this oatmeal.
add a few toppings if desired: (fresh diced apple, raisins, nuts, brown sugar, honey...)

My favorite way to eat this oatmeal is cold leftovers during the week. But it does reheat in the microwave easily.
