Fried Tomatoes
Fried tomatoes are a simple yet delicious dish that makes for a great appetizer or side. To start, slice four large, firm tomatoes into 1/2-inch thick slices. Prepare two bowls: one with a mixture of 1/2 cup all-purpose flour, 1/2 cup cornmeal, 1 tsp salt, and 1/2 tsp black pepper, and the other with a whisked combination of 1/2 cup buttermilk and one egg. Dip each tomato slice into the buttermilk mixture and then coat it with the flour mixture.
Heat vegetable oil in a large skillet over medium heat and fry the tomato slices in batches until they are golden brown on both sides, about 3-4 minutes per side. Once cooked, remove the tomatoes from the skillet and drain them on paper towels. The result is a batch of crispy, flavorful fried tomatoes that can be enjoyed on their own or as a complement to various dishes. Enjoy this easy and delightful recipe! 🍅
