Ken and Ricky, from the @wallaceknifeworkshomestead YouTube channel, go crabbing in Milton, FL as Hurricane Milton was barreling through parts of Central and South Florida. Please watch the Wallace Knifeworks & Homestead channel as since Ricky caught footage of relief worker convoys, under police escort, were headed towards where the hurricane hit.
Afterwards, Ken does a very simple #crab #macaroniandcheese dish. This is an #easyrecipe and a #tastyrecipe. The @european-reacts YouTube channel calls mac and cheese the "national dish of America." Ironically, Ken was grown before he had ever had a traditionally prepared mac and cheese as since it isn't a traditional part of Southern cuisine where Ken was raised.

KEN'S CRAB MAC-N-CHEESE
Picked & Cooked Crab Meat, To Taste (2 to 2 1/2 c. Recommended)
1 c. Reserved Crab Cooking Broth
2 c. Uncooked Elbow Macaroni
1/4 tsp. Nutmeg (Optional)
1/2 to 1 stick Salted Butter
2 c. Shredded Italian Cheese Blend
2 oz. Cream Cheese
4 oz. Panko Bread Crumbs
Tarragon, to Taste (Optional)
1/4 c. All Purpose Flour
2 c. Whole Milk or Half and Half
Parmesan Romano Cheese, to Taste
Salt, to Taste

Water, as Needed
Preheat an oven to 375°F (190°C). In a large pot mix 3 quarts of water with enough salt to make the water taste of seawater. Bring the water to a boil and add in the pasta. Cook for 9 minutes before draining the pasta. Add in 2 tablespoons of butter to the pasta and stir well to keep it from sticking. In a large saucier pan, on low to medium heat, melt 2 tablespoons of butter and mix in the flour. Cook the flour to a blonde stage. Add in the optional nutmeg if you so desire. Slowly add in milk, or half and half, and mix together with a whisk or the back of the spoon. Use less milk than you think you will need to avoid clumping. Keep adding milk, or half and half, until the total amount is absorbed. If more liquid is preferred, you can add your cooking broth and water. You want a somewhat loose white gravy consistency. Before it gets to the consistency you desire, taste the gravy to see if it has the amount of seasonings you want from the cooking broth. Add in the tarragon to taste and adjust for seasonings with salt and pepper to taste. Add in two-thirds of your Italian cheese blend and stir well. Add in your cooked pasta. Then add in your crab (NOTE: In the video, Ken used only about 1/4 cup of crab to show how you can stretch a little. He suggests 2 to 2 1/2 cups of picked crab meat for optimal flavor. You can also substitute crab for imitation crab meat, fish cooked in crab boil, lobster, salad shrimp, or do a mix of seafood with andouille sausage for a low country boil type of vibe). Taste and adjust for seasonings. With the salted butter, grease an 8-inch by 12 inch casserole dish. Use about 1/4 cup of the panko to coat the bottom and sides of the casserole dish. Pour in your mac and cheese. Top with the remaining Italian cheese blend and the Parmesan Romano before topping with the remaining panko. If you desire, melt the remaining butter and drizzle over the top. Cook until the top of the mac and cheese turns golden brown. If it doesn't color like you wish, you can always stick it under a broiler. Just be careful not to burn the top. Let the mac and cheese sit a minimum of 15 minutes to cool outside of the oven before cutting. For a little flare, you can decorate the side with crab shells to make it look like a cooked crab on the side.
