Grilled Stuffed Squid
This Grilled Stuffed Squid is a delicious and flavorful Filipino dish that's perfect for a light and satisfying meal. The combination of tender squid, savory stuffing, and tangy dipping sauce creates a dish that's both delicious and easy to make.
Ingredients:
For the Squid Marinade:
- 1 kilo squid, cleaned
- 5 pieces calamansi (lime) juice
- 1/8 cup soy sauce
- Dash of ground black pepper
- Sugar (optional)
For the Stuffing:
- 3 chopped tomatoes
- 2 medium chopped onions
- 1 teaspoon liquid seasoning
- Salt to taste
- Ground black pepper to taste
- Minced ginger (optional)
For the Dipping Sauce:
- Soy sauce
- Vinegar
- Calamansi (lime) juice
- Chili (to taste)
Instructions:
1. Marinate the Squid: In a bowl, combine the cleaned squid with the calamansi juice, soy sauce, ground black pepper, and sugar (if using). Mix well and marinate for 30 minutes.
2. Prepare the Stuffing: In a separate bowl, combine the chopped tomatoes, chopped onions, liquid seasoning, salt, pepper, and minced ginger (if using). Mix well.
3. Stuff the Squid: Stuff the squid with the tomato mixture. Secure the head with toothpicks.
4. Grill the Squid: Brush each side of the stuffed squid with oil. Grill for 2 minutes per side, or until fully cooked.
5. Prepare the Dipping Sauce: Combine soy sauce, vinegar, calamansi juice, and chili in a small bowl.
6. Serve: Transfer the grilled stuffed squid to a serving plate. Serve with the dipping sauce. Enjoy!
