One-Pot Salmon & Orzo 😋

Ingredients:
2 (6-oz) salmon fillets (of 4; 4-oz filets)
1 shallot, diced
1 tsp dried oregano
2 cup baby spinach
1 cup halved cherry tomatoes
2 tbsp freshly chopped herbs, such as basil, dill, and parsley
2 cup low-sodium vegetable broth
8 oz orzo
1 tbsp extra-virgin olive oil
1/2 cup crumbled feta
1/4 cup red wine vinegar
Pinch crushed red pepper flakes
Lemon wedges, for serving
Kosher salt
Freshly ground black pepper

Cooking Instructions:
Cook Salmon on medium heat in deep edged pan with olive oil. Start with skin side down. It takes approximately 6 minutes per side, should flake with a fork. 140° internal temp. Remove salmon from pan and set aside to rest.

In same pan, cook shallots until soft, 5 minutes. Add Orzo and cook, stirring, 1 minute. Add vinegar and stir until evaporated. Add broth, scrap brown bits. Season with oregano, red pepper flakes, salt, pepper. Bring to simmer, reduce heat, cover. Cook until orzo is tender, about 6 to 8 minutes. Open lid and stir occasionally.

Next, stir in spinach, tomato, feta, and herbs. Return salmon to pan (set on top of mix).

Once spinach is wilted - serve.

Tip: Cut and squirt a wedge of lemon over meal to bring flavors forward!
