Keto Chocolate Donuts Recipe
Ingredients:
1/2 Cup Pork Panko (finely ground) 🍩
1/4 cup Unsweetened Cocoa powder 🍫
1/2 cup Magic Baker's🍯
2 large eggs (separated)
1/2 cup egg whites (or egg whites from 4 eggs), room temp
1/2 cup keto milk
2 oz cream cheese, softened and room temp
2 T melted butter 🧈
2 T coconut flour
2 t baking powder
1/4 t xanthan gum
1/4 t salt
1 t vanilla extract

Preheat the oven to 350°F. Spray two donut pans with olive or avocado oil spray or grease them with butter. Separate the eggs and set the yolks and whites to the side for now.
In a yellow mixing bowl, whisk together the finely ground pork breadcrumbs, coconut flour, cocoa powder, Magic Baker's, baking powder, salt, and xanthan gum. Sift it if it's easier.
In another bowl, beat the softened cream cheese, egg yolks, vanilla extract, keto milk, and melted butter until smooth and well combined.
Gradually add the wet ingredients to the dry ingredients. Mix until fully incorporated.
Whip the 1/2 cup egg whites and the 2 separated egg whites in a stand mixer until they get stiff peaks. Gently fold the whipped egg whites into the chocolate batter. Stir carefully to maintain the airy texture from the egg whites but make sure the mixture is well-combined.
Spoon or pipe the batter from a Ziplock bag into the molds, filling each mold about 2/3 of the way up.
Bake for 16-20 minutes or until the donuts are set and a toothpick comes out clean. Turn oven offand let the donuts cool in the oven with the door cracked for 30 minutes, then take them out and let them cool completely. You can put them on a cooling rack if want.
Glaze:
1/4 cup powdered Magic Bakers (or your favorite powdered keto sweetener)
1 T heavy cream
1-2 T water (adjust to reach desired consistency)
In a medium-sized bowl, whisk together the powdered Magic Baker's, heavy cream, and slowly add water until it reaches a smooth, glazy consistency.
Once the donuts have cooled completely, paint them with a silicone brush. Only glaze the ones you'll eat right then. If you glaze them all, they'll get soggy when stored. ENJOY!
