Chicken Florentine - Easy, Keto, and Delicious!

Welcome back to the channel. Today, we're pressing the easy button. Easy. Quick. Delicious. It happens to be a dish that's keto, but works for your non-keto friends/family! Better still, it's made using stuff that you probably already have at home right now. So, let's get cooking!

Ingredients:
~ 1.5 lbs boneless skinless chicken cut up into bite sized pieces
~ 1 large onion, diced
~ 4 cloves garlic, squished
16 oz bag of frozen chopped spinach, defrosted
~ 3 cups heavy whipping cream
~ 3 tablespoons butter; divided in half
~ 1 cup Parm cheese (green can, shuggeda-shuggeda is fine for this dish)
~1/2 teaspoon salt
~ 1/2 teaspoon Complete Seasoning (Badia)
~ 1/4 teaspoon fresh ground black pepper
Pinch of nutmeg

Place a large pan under medium heat.
Add half the butter
Add diced onion and stir until translucent.
Add garlic and cook for ~ 10-20 seconds, then flip and cook another 10-20 seconds. Then integrate the garlic with the onion.
Add defrosted spinach and mix.
Cook for ~ 5 - 10 minutes, then add the cream while stirring.
Add pinch of nutmeg.
Add salt, Complete Seasoning, pepper to the cut up chicken and stir to coat.
Place a separate pan under medium high heat.
Add remaining butter.
Drop chicken into the hot pan and stir.
Keep stirring periodically until the chicken is cooked most of the way through.
Add the chicken and contents of pan to the creamy spinach mix and stir.
Cook over medium high heat stirring often.
Once chicken is completely cooked, add ~ 1 cup of Parm cheese and stir.
Taste and adjust seasoning as needed.
