Apple Pie in a Bag

**I am making my favorite pie recipe today. Handed down from my mother, this is the best Apple Pie around.

Apple Pie In A Bag. 425ºF/220ºC bake 1 hour
**prepare a pie dish with pie crust and place off to the side
**Preheat oven 425ºF/220ºC
-2 1/2 pounds baking apples, peeled and sliced, place them in cool water with
-1 Tablespoon lemon juice or white vinegar
**In a large bowl :
-Drain and add apples
-1/2 cup sugar
-2 Tablespoons flour
-1 teaspoon cinnamon
-1 Tablespoon lemon juice
**Toss to coat the apples, pour into the pie crust

Topping
-1/2 cup soft butter
-1/2 cup flour
-1/2 cup sugar
-1/2 teaspoon cinnamon
**mix well, place in the microwave for 10 seconds if needed, this should be a spreadable paste like mixture
**drop spoonfuls of the mixture all over the top of the pie, spread over the pie with a spatula. Do not worry about getting the topping to the edge of the pie

**Place the pie in a brown grocery bag, roll the end of the bag up and clip shut if it is not staying shut on it's own.
**Put the bag with the pie on a baking sheet, this makes it easier to move and keeps it from spilling during baking
**Put the pie on the baking sheet in the oven with the racks bumped down so the paper bag does not touch any part of the oven
**THIS IS VERY IMPORTANT, DO NOT LET THE BAG TOUCH ANY PART OF THE OVEN. BE SURE THE SIDES OF THE BAG ARE NOT TOUCHING THE WALLS.
**This could easily catch on fire if you are not careful.
**If this makes you nervous, try baking without the bag. I am sure it will still be delicious.
**Bake 1 hour
**Remove to a cooling rack and remove the bag, I just rip it open.
**Let the pie cool completely

I make several of these for Thanksgiving every year, I bake them the day before and they are the first dessert to be finished.
