Cowboy Breakfast Casserole
Ingredients: 1 lb ground beef or sausage, 1/2 onion (chopped), 8 eggs, 2 cups hash browns, 1 1/2 cups shredded cheese, 1 cup milk, salt, pepper.
Directions:
Preheat oven to 350°F (175°C).
In a skillet, cook ground beef or sausage with onions until browned. Drain any excess grease.
In a large bowl, whisk together eggs, milk, salt, and pepper.
Grease a 9x13-inch baking dish. Spread the hash browns on the bottom, then add the cooked meat mixture.
Pour the egg mixture over the top and sprinkle with shredded cheese.
Bake for 35-40 minutes, until the eggs are set and the cheese is bubbly.
