Keto Breakfast: Avocado Toast with Eggs

Ingredients:

1 ripe avocado
2 slices of keto bread (or any low-carb bread of your choice)
2 large eggs
1 tablespoon of butter or ghee
Salt and black pepper to taste
Optional toppings: chopped fresh herbs, sliced cherry tomatoes, hot sauce
Instructions:

Cut the avocado in half and remove the pit. Scoop the avocado flesh into a bowl and mash it with a fork until it's smooth.
Toast the bread slices until they are crispy and golden brown.
Heat a frying pan over medium heat and melt the butter or ghee in it.
Crack the eggs into the frying pan and cook them until the whites are set but the yolks are still runny.
Spread the mashed avocado on the toast slices and sprinkle with salt and black pepper to taste.

Place a fried egg on top of each toast slice. If desired, add any optional toppings such as chopped fresh herbs, sliced cherry tomatoes, or hot sauce. Serve and enjoy! This recipe makes 2 servings.
