Gerang Sambal Matah is one of our very old style side dishes, made from fried dried anchovy mixed with fresh shallots, garlic, chilli, and ginger torch sambal, yummy and spicy and perfect served with warm rice. in Bali we have a lots of dried fish as our island surrounded by the sea. In the old days when the fisherman caught so many fish the normally dried the left offer fish to preserve them, this is one of the most popular dried fish dish in Bali. Ingredients :
100 gr small dried anchovy (ikan teri)
7 pcs shallots
1 pcs garlic
8 pcs Bali hot pepper
4 pcs small green chilli
2 pcs medium ginger torch flowers
2 pcs lemongrass
1/4 cup coconut oil
4 pcs kaffir lime leaves
1 kaffir lime fruit
1/2 tsp sea salt
1/2 tsp mushroom bouillon powder
500 ml fresh water
500 ml vegetables oil for deep frying the dried anchovies
