My Version of Goulash

Ingredients

1 lbs ground beef
1 yellow onion chopped
1 tsp garlic minced
15 oz diced tomatoes undrained
8 oz tomato sauce
1 tsp Italian seasoning
8 oz elbow macaroni
1 Cup Water if needed

Instructions

In a Dutch oven or large saucepan, cook ground beef over medium heat until no longer pink. Drain grease.

Add Onion and garlic and cook for 3 minutes, or until soft and fragrant.

Add diced tomatoes, tomato sauce, Italian seasoning, and elbow macaroni to the pan. If needed add ½ to 1 cup of water. Mix well and bring to a boil. Reduce to medium-low heat, cover pan and simmer for 25-30 minutes or until pasta is cooked through.

Remove from heat and serve. I like to sprinkle the top with Parmesan cheese when serving.

Storing:

If you want to freeze you can make up but DON'T ADD THE MACARONI. It will keep in the freezer for up to 6 months. You can’t add the macaroni before you freeze because the consistency gets weird. If you pull it from the freezer let it thaw in the refrigerator. When you are ready to warm the mix in a pot and add the uncooked pasta and cook for 25-30 min until pasta is done. Or cook pasta accordingly to the box, then add in the pasta into the warmed mixture. I usually add cooked pasta to cold mixture and my husband takes to work and microwaves for lunch.
