Ingredients:
For the Motichoor Ladoo:
• 1 cup fine gram flour (besan)
• Orange food color
• A pinch of baking soda
• Water, as needed
• Oil or ghee for frying

For the Sugar Syrup:
• 3/4 cup sugar
• 1/2 cup water
• A few saffron strands (optional)
• 3 cardamoms

Instructions:
1. Make the Motichoor Batter:
• Place a sieve over a bowl & sieve in the gram flour.
• Add orange food color and baking soda. Mix well
• Add water in batches while whisking it continuously to make a smooth, thick batter. The batter should be of dropping consistency, not too runny or too thick.

2. Fry the Motichoor Pearls:
• Heat oil in a wok over medium heat.
• Hold a perforated ladle about 4-5 inches above the hot oil. Pour a small amount of the batter onto the ladle and gently tap it to let small droplets of batter fall into the hot oil. These droplets will form tiny pearls as they fry.
• Fry the pearls until they turn golden.
• Once all the boondis are fried, pulse them in a food processor until the boondis are broken down into smaller pieces.

3. Prepare the sugar syrup:
• In a pan, combine sugar, cardamoms, saffron strands and water to make the sugar syrup.
• Bring the syrup to a boil and let it simmer until it reaches a one-string consistency. This means that if you take a small amount of syrup between your thumb and index finger and pull them apart, a single string-like consistency should form.

4. Cook the Boondis in Sugar Syrup:
• Add the pulsed boondis to the sugar syrup and cook for 3-4 minutes or until all the sugar syrup is absorbed by the boondis,
• Once all the sugar syrup is absorbed, add melon seeds and mix well.
• Turn off the heat, cover the pan & let the mixture rest for 10 minutes.
• After the mixture has rested, transfer it into a large bowl.
• Let the mixture cool down till it reaches room temperature.
5. Shape the Ladoo:
• Once the mixture has cooled down, take small portions of the mixture and shape them into round ladoos.
• Serve and enjoy!
