Lobia Masala Curry Recipe

In this video, I will be showing you how to make a delicious and flavorful lobia masala curry. This popular Pakistani dish is packed with protein and perfect for vegetarians. With a blend of aromatic spices and a rich tomato-based gravy, this lobia masala curry is sure to become a family favorite.

Ingredients:
• 1 and 1/2 cups lobia (Kidney beans), soaked overnight
• 1/2 cup ghee
• 1 onion, finely chopped
• 1/2 cup tomato puree
• 1 green chili, finely chopped
• 1 tablespoon ginger-garlic paste
• 1 teaspoon paprika powder
• 1 teaspoon coriander powder
• 1 teaspoon turmeric powder
• 1/2 teaspoon red chili powder
• 1/2 teaspoon garam masala
• Salt to taste
• 1 and 1/2 cups water
• 1 teaspoon kasuri methi
• Fresh coriander leaves for garnish

Instructions:
1. In a large pan, add 6 cups of water.
2. Bring the water to a boil on high heat.
3. Add lobia. Cover and cook on medium heat until they are soft but not mushy.
4. Once cooked, drain the water and set the lobia aside.
5. Heat ghee in a wok over medium heat.
6. Add the chopped onion and sauté until light golden.
7. Add the ginger-garlic paste and sauté for 30-40 seconds.
8. Add the tomato puree, red chili powder, paprika powder, turmeric powder, coriander powder, and salt. Cook for 3-4 minutes.
9. Add the boiled lobia to the wok. Mix well.
10. Add water and bring it to a boil.
11. Cover and cook on medium-low heat for 10 minutes.
12. Add garam masala, kasuri methi, chopped green chili and fresh coriander leaves. Mix well.
13. Serve hot with rice or roti.
