Harvesting Edible Cacti Pads to add to our dinner 😉

Our preference is for low carb / keto, mostly avoiding grains as we feel improved with aging (anti inflammation, anti modern diseases...) . Sometimes of course , it's nice to treat yourself to something different .

So I harvested my cacti...
adding them to my "Garlic Vegetable Herb Rice" (served with meat - not pictured).

How to prep your cacti pads
-Select younger more tender ones
The more you harvest, the more your plants will pump out (similar to other veggies).. so harvesting is key.
-If using those with just developing thorns, shave them off with a knife.
-Soak in water for a few mins, rubbing off any dirt, dust... I do not use soap, just wiping off with "ones hands" is sufficient.
-Slice
-Add cacti pads to a pot of water, cooking for 15 mins or so "until tender."
-Drain
-Toss into a pot of pre soaked/drained basmati rice, add animal fat, butter, coconut oil, Himalayan Sea Salt, sprinkle with cayenne, freshly crushed garlic cloves... Add whichever other vegetables/herbs to taste.
-Cook(using common rice cooking method).

Cacti pads are similar to okra and quite healthful
