Beetroot & Apple Salad with Mustard Honey Dressing (Serves 3)

Ingredients:

Salad:

2 raw beets
2 carrots
2 green apples
1 tablespoon sunflower seeds
1 tablespoon pumpkin seeds
1 tablespoon chia seeds
1 tablespoon flaxseeds
1 tablespoon sesame seeds
Handful of fresh parsley, chopped
Handful of fresh dill, chopped
Handful of fresh mint, chopped
Handful of fresh coriander, chopped

Dressing:

2 tablespoons mustard
2 tablespoons apple cider vinegar
1 tablespoon Manuka honey
2 tablespoons olive oil
Pinch of black pepper
Pinch of Celtic salt

Instructions:

In a large mixing bowl, combine the grated beets, carrots, and green apples.
Add the chopped parsley, dill, mint, and coriander to the bowl.

Make the Dressing:

In a small bowl, whisk together the mustard, apple cider vinegar, Manuka honey, olive oil, black pepper, and Celtic salt until well combined.

Add the sunflower seeds, pumpkin seeds, chia seeds, flaxseeds, and sesame seeds. Toss again to mix everything evenly.

Drizzle the dressing over the salad
