Instructions:

Chill the dough: Leave the dough in the refrigerator for about 45 minutes to stiffen it and prevent it from spreading during shaping and scoring.

Prepare the twine: Cut four long pieces of twine (about 36 inches each) and tie them together with a single knot in the middle. Optional: Soak the twine in olive oil to prevent sticking to the dough.

Form the pumpkin shape: Spread the twine out on a bread sling to create eight pie slice shapes. Place the sourdough dough on top of the twine and dust with rice flour. Adjust the strings to be evenly spaced and tie them together in knots at the center of the dough.

Score the pumpkin: Use a bread lame to score fun designs into each section of the sourdough pumpkin.

Bake: Transfer the pumpkin-shaped sourdough to a Dutch oven and bake according to your usual sourdough recipe.
Cool: Transfer the baked bread to a cooling rack and let it cool slightly before removing the twine.

Add a cinnamon stick to the top for a stem.
