This Beef Tips and Gravy recipe is super delicious. It’s cooked until fork tender in a rich and flavorful gravy, and served over Orzo with Quinoa & Brown Rice (or pasta of your choice, or potatoes!), and a side of Zucchini - it’s really just the perfect combination of comfort food.

Beef Tips and Gravy
3 lbs London Broil, Chuck, or Stew meat, cubed into 2” chunks
Marinade overnight in:
¼ c Soy Sauce
1 Tbls Worchester Sauce
1 Tbls Seasoned Rice Vinegar
2 cloves minced Garlic
1 tsp Onion powder
Black pepper.

Brown meat, then add:
1 cup chopped onion
¼ cup fresh parsley finely chopped
1/4-1/2 cup minced shallot
2 cloves minced garlic
3 cups Beef Broth
1 package dry Onion Soup mix
Cover and let simmer 1 1/2 hours or until fork tender.
Cornstarch slurry to thicken the gravy (3 Tbl cornstarch mixed with ¼ cup water)

Orzo and Quinoa & Brown Rice
½ lb. Orzo pasta cooked per the package instructions
1 8.5 oz package precooked Quinoa & Brown Rice
3-4 Tbl butter

Roasted Parmesan Zucchini
3-4 Zucchini
¼ cup Parmesan, finely ground
Season Zucchini with Garlic Herb Salt, Oregano, Pepper, Parmesan, and Sweet Red Pepper Flakes.
