#Inflation and the rising #costofliving is hitting everyone hard. So, in this video, Ken decided to clean out the freezer and refrigerator to make a #chickenchili with #blackbeans. This really isn't a #chilirecipe per se as it is a way to use up scraps to make a meal.

KEN'S CHICKEN CHILI WITH BLACK BEANS

2 cans Black Beans, Dried & Rinsed
1 lb. Chickens, Cooked and Shredded
Minced Hot Peppers, to Taste
1 Bell Pepper, Chopped
Salsa, to Taste
Salsa Verde, to Taste
1 tbsp Dried Oregano Leaves
2 tbsp Cumin Powder
4 c. Chicken Stock
Salt, to Taste
1 tbsp. Granulated Garlic
1 tbsp. Onion Powder
1/2 tbsp. Tajin
1/2 tbsp. Ground Allspice
1 tbsp. Hungarian Paprika
2 Bay Leaves
1-2 tbsp. Corn Meal (Optional)
Water, as Needed

In a stock pot add all of the ingredients, but the corn meal, and bring to a boil for about 15-20 minutes. If you wish for a thicker chili, then add in corn meal. Cook another 5-10 minutes, if using corn meal, and serve hot with crackers, cheese, and sour cream. (TIPS: This recipe can be modified to your tastes and use virtually any meat or beans. The canned adobo sauce, from canned chipotle peppers, would also be good with this.)
