Recipe: Sahlab (Middle Eastern Milk Pudding Drink)
Ingredients:
2 cups milk (whole or any milk of your choice)
2 tablespoons sahlab powder (ground orchid root)
2 tablespoons sugar (adjust to taste)
1 teaspoon vanilla extract (optional)
½ teaspoon ground cinnamon (plus extra for garnish)
2 tablespoons crushed pistachios (for garnish)
A pinch of salt
Optional toppings: shredded coconut, dried fruits, chocolate shavings, or rosewater
Step-by-Step Instructions:
Step 1: Prepare the Ingredients
Gather all ingredients and tools needed: a saucepan, measuring cups, a whisk, and serving mugs or bowls.
Step 2: Mix the Sahlab Powder
In a small bowl, combine the sahlab powder and 2 tablespoons of cold milk. Mix until smooth and there are no lumps. This step helps to prevent clumping when you add it to the hot milk.
Step 3: Heat the Milk
In a saucepan, pour the remaining 1¾ cups of milk and add sugar, a pinch of salt, and vanilla extract (if using).
Heat the mixture over medium-low heat, stirring gently to dissolve the sugar.
Step 4: Add the Sahlab Mixture
Once the milk is warm (not boiling), slowly add the sahlab mixture while continuously whisking. This ensures the sahlab powder gets evenly distributed and thickens the milk without clumps.
Step 5: Cook Until Thickened
Continue to cook the mixture on low heat, stirring constantly, until it thickens to your desired consistency (about 5-10 minutes). The Sahlab should be creamy and coat the back of a spoon.
Step 6: Serve the Sahlab
Once thickened, remove from heat and pour the Sahlab into serving mugs or bowls.
Step 7: Garnish
Sprinkle ground cinnamon and crushed pistachios on top for added flavor and texture. Feel free to get creative with other toppings like shredded coconut, chocolate shavings, or a drizzle of rosewater.
