Quick & Easy Bruschetta Chicken Pasta recipe, combining the classic flavors of bruschetta with tender chicken and pasta for a perfect weeknight meal!

Ingredients:
2 boneless, skinless chicken breasts (cubed)
8 oz pasta (penne or spaghetti work well)
2 tbsp olive oil
1 tsp Italian seasoning
1 tsp garlic powder
Salt and pepper (to taste)
For the Bruschetta Topping:
3-4 ripe tomatoes (diced)
2 cloves garlic (minced)
2 tbsp fresh basil (chopped)
1 tbsp balsamic vinegar
1 tbsp olive oil
Salt and pepper (to taste)
For Garnish:
Fresh grated Parmesan cheese
Extra fresh basil or parsley
Balsamic glaze (optional)
Instructions:
1. Cook the Pasta:
Bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente. Drain and set aside.
2. Prepare the Bruschetta Topping:
While the pasta is cooking, in a medium bowl, combine the diced tomatoes, minced garlic, chopped basil, balsamic vinegar, and olive oil. Season with salt and pepper. Stir and set aside to let the flavors meld.
3. Cook the Chicken:
In a large skillet, heat olive oil over medium heat.
Season the chicken cubes with Italian seasoning, garlic powder, salt, and pepper.
Cook the chicken in the skillet for about 5-7 minutes, stirring occasionally, until it is golden brown and fully cooked through.
4. Combine Chicken, Pasta, and Bruschetta:
Add the cooked pasta to the skillet with the chicken and toss to combine.
Remove from heat and fold in the bruschetta topping, stirring gently to distribute the tomatoes and basil.
5. Garnish and Serve:
Sprinkle with fresh Parmesan and extra basil or parsley.
For an extra burst of flavor, drizzle with balsamic glaze (optional).
Tips:
You can use grilled or baked chicken if you prefer.
For a healthier twist, try using whole wheat or gluten-free pasta.
This Bruschetta Chicken Pasta is a perfect combination of fresh and savory flavors—simple, quick, and bursting with flavor!
