Ingredients

Sweet Stiff Starter:

• 30g Starter

• 40g Water

• 100g Bread Flour

• 10g Sugar

Dough:

Sweet Stiff Starter

250g Bread Flour

• 2 Egg Yolks

• 120g Milk

45g Sugar

4g Salt

• 45g Butter

Cream Cheese Filling:

• 250g Cream Cheese

• 50g Sugar

• 15g Corn Flour/AP Flour

• 20g Milk

• Zest of 1/2 Lemon

• Pinch of Salt (optional)

For Assembly:

Egg Wash

Method

1. Starter: Mix ingredients; let it rest until doubled (4 hrs).

2. Dough: Combine starter, flour, egg yolks, milk, sugar, and salt. Knead until elastic. Gradually add butter. Knead to window-pane stage. Let dough double.

3. Shape: Divide dough (90g portions). Roll into balls, proof until doubled.

4. Filling: Beat all ingredients until smooth.

5. Assemble: Preheat oven to 185°C. Press centers, egg wash, pipe filling, top with blueberries.

6. Bake: 18-20 mins. Cool slightly and enjoy!
