Mini Chocolate Berry Trifles—a delightful dessert that layers rich chocolate cake, smooth cream, and fresh berries.

Ingredients:
For the Cake:

1 cup all-purpose flour
½ cup unsweetened cocoa powder
1 cup sugar
1 tsp baking soda
½ tsp baking powder
¼ tsp salt
1 egg
½ cup buttermilk
½ cup warm water
¼ cup vegetable oil
1 tsp vanilla extract
For the Whipped Cream:

1 cup heavy whipping cream
2 tbsp powdered sugar
1 tsp vanilla extract
For the Layers:

1½ cups mixed berries (strawberries, raspberries, blueberries)
4 oz dark or milk chocolate (for melting or shaving)
Optional: Mint leaves for garnish
Instructions:
1. Bake the Chocolate Cake:

Preheat oven to 350°F (175°C) and grease a small 8x8 inch baking pan.
In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt.
Add egg, buttermilk, warm water, vegetable oil, and vanilla extract. Stir until combined and smooth.
Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean.
Let the cake cool completely, then cut it into small cubes.
2. Prepare the Whipped Cream:

In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Be careful not to overwhip.
3. Assemble the Trifles:

In small glass jars or cups, layer cubes of chocolate cake, followed by a layer of whipped cream, a handful of fresh berries, and a drizzle of melted chocolate or chocolate shavings.
Repeat the layers, finishing with whipped cream and berries on top.
4. Chill and Serve:

Refrigerate the trifles for at least 30 minutes to let the flavors meld. Garnish with additional berries, chocolate shavings, and mint leaves if desired.
