Ingredients:

12 sheets of rice paper
2 eggs
300g full-fat cottage cheese
Salt to taste
Coconut oil (for greasing tray and brushing on top)
Flax seeds (for sprinkling on top)
Instructions:

Preheat Oven: Set your oven to 180°C (350°F).
Mix Ingredients: In a bowl, combine the cottage cheese, eggs, and salt until well mixed.
Prepare Rice Paper: Soak each rice paper in warm water for about 30 seconds, or until softened.
Assemble Bites: Place a spoonful of the cottage cheese mixture in the center of each softened rice paper and wrap it tightly.
Prepare Tray: Grease a baking tray with coconut oil. Arrange the wrapped rice paper rolls on the tray.
Add Toppings: Brush the tops of the rolls with a bit of coconut oil and sprinkle with flax seeds.
Bake: Bake for 15 minutes, or until the rolls are golden and crispy.
