Easy Tofu Spring Rolls with Tahini Dipping Sauce

Ingredients:
10 rice paper wrappers
200g (7 oz) tofu
1 cucumber
1 zucchini
2 carrots
1 red pepper
10 lettuce leaves
100g (3.5 oz) rice noodles, cooked (for a heartier version)

For the Tahini Dipping Sauce (for 10 spring rolls):

2 tbsp coconut milk
4 tbsp soy sauce
Juice of 1 lemon
4 tbsp tahini

Instructions:

Prepare the ingredients:

With Noodles: Cook the rice noodles according to package instructions, then drain and set aside.

Soak one rice paper wrapper at a time in warm water for a few seconds until it becomes pliable.

Lay the wrapper flat on a clean surface. If using noodles, place a small amount of noodles in the center of the wrapper. Top with lettuce, tofu, cucumber, zucchini, carrots, and red pepper. If not using noodles, simply add the vegetables and tofu directly.

Fold the sides of the wrapper over the filling and roll tightly from the bottom up.

Make the tahini dipping sauce:

In a small bowl, whisk together 2 tbsp coconut milk, 4 tbsp soy sauce, the juice of 1 lemon, and 4 tbsp tahini until smooth and well combined.

Serve:

Arrange the spring rolls on a plate and serve with the tahini dipping sauce on the side.
