APPLE PIE FILLING CUPCAKES
with CINNAMON BUTTERCREAM ICING
1 box yellow cake mix
Prepare and bake cake mix according to directions on box
Bake and cool completely
Apple Pie Filling:
2 tablespoon butter or margarine4 medium apples, peeled and finely chopped (about 4 cups)
3/4 cup packed brown sugar
1 tablespoon cornstarch
1 tablespoon water
In a large skillet, heat butter on medium heat.
Add apples and brown sugar.
Cook and stir until apples are tender (10-12 minutes)
Mix cornstarch and water together and stir into the apples.
Bring to a boil, cook and stir until thickened (1-2 minutes)
Remove from heat and cool completely.
Using a paring knife cut a 1-inch-wide cone shaped piece from each cupcake.
Fill the hole with cooled apple pie filling.
Cinnamon Buttercream Icing
1 cup butter or margarine softened to room temperature
3 cups confectioners' sugar
2 tablespoon heavy whipping cream
1 teaspoon vanilla extract
1 1/2 teaspoon ground cinnamon
Cream butter and add the rest of the ingredients
Beat until smooth and fluffy
Frost the cupcakes
Garnish:
1 apple
2 cups cold water
2 tablespoon lemon juice
Cut thin apple slices with peel on
Place in lemon water for 3 minutes
Drain water from apples
Dry apple slice and place on cupcake
