- 4 lbs beef cheeks and ox tail
- enough beef broth to cover
- 4 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, chopped
- bag of baby potatoes,
- 3 cloves garlic
- optional Herbs: thyme, rosemary, bay leaf
- Salt and pepper to taste

### Instructions:
1. **Sear the Beef:** In a large pot, heat olive oil and brown the beef cubes. Remove and set aside.
2. **Sauté Vegetables:** In the same pot, add onion, carrots, and garlic. Cook until soft.
3. **Combine Ingredients:** Return beef to the pot. Stir in tomato paste, then add potatoes, herbs, and beef broth.
4. **Simmer:** Cover and let it simmer on low heat for 2-3 hours until the beef is tender and the flavors meld together.
5. **Season:** Add salt and pepper to taste.
