Ingredients:

33g unsalted butter at room temperature
40g of sugar
40g of flour
How to prepare: Mix the butter, sugar and flour until it forms a homogeneous dough. Book.

2. Éclair dough:
Ingredients:

65g of milk
65g of water
60g butter
2g of salt
65g flour
3 eggs
Preparation method:

In a pan, place the milk, water, butter and salt.
Bring to a boil and cook for 10 seconds after boiling.
Add the flour and stir until a homogeneous dough forms.
Remove from the heat and add the eggs, one by one, mixing well until combined.
Baking the Éclairs:

Preheat the oven to 190°C and bake for 15 minutes.

2 egg yolks
35g of sugar
10g corn starch
200g of milk
Vanillin (to taste)
170g fresh cream (33% fat)
17g of sugar
Preparation method:

Mix the egg yolks, sugar and cornstarch.
In a pan, add the milk and vanillin, and cook until it starts to bubble.
Add fresh cream and sugar, stirring until a consistent cream forms.
4. Assembly:
Fill the baked éclairs with vanilla cream.
Finish with the crunchy craquelin topping and serve!
